Ingredients:
- 1 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 carrots, chopped
- 2 celery stalks, chopped
- 1 zucchini, diced
- 4 cups bone broth or vegetable broth
- 1 tsp thyme
- 1 tsp sea salt
- 1/2 tsp pepper (omit for AIP)
- Fresh parsley to serve
Instructions:
- Heat oil in a large pot over medium heat.
- Add onion, garlic, carrot, and celery; sauté 5 minutes.
- Add zucchini, broth, and seasonings.
- Bring to boil, then reduce to simmer for 20 minutes.
- Serve topped with fresh parsley.
